One Plant, Three Ways: The Kitchen Science of Broccoli, Cauliflower, and Cabbage

Did you know that your kitchen is home to a family of master-of-disguise vegetables?

It sounds like a fun riddle, but it’s a botanical fact: Broccoli, Cauliflower, and Cabbage are actually different varieties of the very same plant! While they look and taste different, they all belong to a single species called Brassica oleracea (also known as Wild Mustard). Over hundreds of years, farmers selectively bred this one plant to highlight different parts.  

Cabbage was bred for its large, leafy buds.

Broccoli was bred for its thick stems and tasty flower heads.

Cauliflower was bred for its dense, white "curd."

1. "Confetti Cabbage" Slaw

Best for: Whizzy the Whisk and Flex the Spatula

Cabbage can be crunchy and fun! Have your child help make a colorful side dish.

The Prep: Use Whizzy the Whisk to mix together Greek yogurt, a squeeze of lemon, and a drop of honey.

The Mix: Let your little one use Flex the Spatula to fold the dressing into shredded purple and green cabbage and grated carrots.

Why it works: The bright colors and the "crunch" factor make cabbage much more appealing than when it’s boiled or soggy.

2. Cheesy Broccoli & Cauliflower "Trees"

The Prep: Place steamed broccoli and cauliflower florets on a tray. Let your child use Rush the Brush to "paint" them with a little olive oil or melted butter.

The Topping: Sprinkle with grated cheddar cheese. Use Flex the Spatula to gently toss them so the cheese gets into all the "nooks and crannies" of the florets.

The Finish: Pop them in the oven for 5 minutes until the cheese is bubbly.

3. "Secret Ingredient" Cauliflower Mash

Best for: Scoopy the Scoop and Flex the Spatula

If your child loves mashed potatoes, this is the perfect "cousin" swap.

The Prep: Steam cauliflower until very soft. Have your child use Scoopy the Scoop to transfer the cauliflower into a bowl.

The Mash: Use Flex the Spatula to help "smoosh" the cauliflower (or blend it for a smoother finish) with a bit of butter and milk.
